Plain Syrup (II)

Fruit Acid.

I quart 3 quarts I ounce If your fountain is small, serve the well-known popular flavors. Do not attempt to introduce new drinks.

Bob's Dream.

Prepare a mild silver fizz, strain into a fancy stem glass, carefully pour down the inside of the glass about an ounce of abricotine, then pour down the inside of the glass about an ounce of abricotine, then pour down about half an ounce of claret wine. The abricotine will lie on the bottom, while the claret will stay between the foam and the fizz proper, making a very delicious and handsome drink.

Bonnie Belle Cream.

Three-fourths ounce pineapple syrup, 34 ounce vanilla syrup, 2 ounces ice cream, 4 glass cracked ice, I egg. Shake, strain, toss and serve. Boston Flip.

One-half ounce lemon syrup, I ounce pineapple syrup, I egg; 4 glass cracked ice. Shake, strain, toss and serve with nutmeg or cinnamon. Boston Nut Sundae.

One dipper of ice cream, sliced orange cut in diamond-shaped pieces, sliced pineapple cut in triangular shape, whole English walnuts, maraschino cherries. The nuts and fruits to be arranged artistically. No syrups used. " "Boxer" Flip.

Mixing glass half full shaved ice, I dash angostura bitters (or orange bitters), add 2 ounces port wine, 1/2 ounce ginger ale syrup, I ounce lemon syrup, add soda from large stream, pour from shaker to tumbler several times and serve with slice of pineapple or orange.

Broadway Flip.

Put in mixing glass two large sprays of mint, 1/2 ounces blood orange syrup, 2 dashes of acid phosphate, I egg, fill glass half full shaved ice, shake , 2 dashes of acid phosphate, I egg, fill glass half full shaved ice, shake well and strain. Add fine stream soda, toss several times, grate nutmeg on top and serve with straws.

Brownies.

One ounce coca-cola in a mineral glass, add dash of ginger extract, solid soda, stir and serve.

Brunswick Cooler.

This is a popular Jersey drink. One-half ounce lemon syrup, 1/2 ounce orange syrup, 1/2 ounce cherry syrup, 14 glass shaved ice. Fill glass with coarse stream. Dress with pineapple and cherry fruit. "Buffalo."

Chipped ice, a dash of vanilla, nectar syrup, lemon juice, sherbert, dash of grape juice, sprig of mint, slice of pineapple, slice of orange, strawberries and maraschino cherries.

Simple Syrup is the basis of all soda water syrups and the formula for making it is given in this book.

Buffalo Eleven.

One-fifth ounce pineapple syrup, one-fifth ounce strawberry syrup, onefifth ounce raspberry syrup, one-fifth ounce vanilla syrup, one-fifth ounce claret syrup, I dash acid solution phosphate, 1/2 ounce plain cream. Ice. Shake, strain, toss and serve.

Buffalo Nut Sundae.

One-half pound grated walnuts, 2 pounds grated orange, claret syrup enough to make 1½ gallon. Fill sundae glass two-thirds full of rich ice cream and pour one ladle of above over cream.

Buffalo Sherry Cobbler.

One spoonful powdered sugar, 1 ounce pineapple syrup, 4 glass ice, 5 dashes sherry wine. Add plain soda within 1 ounce of top. Add slice of orange or lemon. Then add port wine to fill. Do not stir, and you will have a very pretty drink.

Burgundy Punch.

Two ounces Burgundy wine, I ounce orange syrup. Fill a 12-ounce glass with crushed ice, draw coarse stream to fill glass. Decorate with slice each of pineapple and orange. Serve with straws.

Cafe Boushea.

Serve in a 12-ounce glass. One-half fluid ounce of coffee, fill half full of fine shaved ice, sugar or simple syrup to sweeten to taste, fill glass with milk and shake thoroughly and then top off with nutmeg or cinnamon and serve with straws.

Calcutta Lemonade.

Pare thinly the peel of 2 dozen fresh lemons, squeeze the juice of them on the peel, and let them stand 12 hours. Then add 2 pounds of granulated sugar and I quart of good sherry, 3 quarts boiling milk. When cold strain through a cloth. Serve with chopped ice and a straw. Calhoun Mint Julip.

Two-thirds glass shaved ice, 2 ounces lemon syrup, juice of half a lemon, 3 dashes angostura bitters; add a sprig of fresh mint, and with spoon crush it against the tumbler to obtain the flavor. If mint is not at hand, use instead a dash of extract, with a slice of lemon. Fill with plain soda, serve with straws.

Calisaya Syrup.
