Plain Syrup

Fruit Acid.

Arctic Punch.

I quart 3 quarts I ounce Two-thirds glass shaved ice, 4 ounces sweet cream, 3 dashes Jamaica rum or I dash of bitters; shake slightly in shaker, pour into glass without straining. Serve with straw, and, if desired, nutmeg. Arctic Sherbet.

Make a sherbet of 10 ounces pineapple syrup, 10 ounces strawberry syrup, 10 ounces vanilla syrup, 2 to 3 ounces orange essence, 1/2 ounce solution of citric acid. Serve by filling a large mineral water glass one-third full of shaved ice, add 12 ounces of the above syrup, fill the glass with the coarse stream, stir well and serve with straws.

Arion.

One-half ounce apricot syrup, 1½ ounce peach syrup, 1/2 ounce rose syrup, 2 ounces plain cream, I egg, 4 glass ice. Shake, strain, toss and serve. Aspepsin.

Make a syrup of 60 grains pure pepsin, I dram solution of acid phosphates, 2 ounces water, I pint vanilla syrup, and raspberry syrup enough to make 2 pints. Dissolve the pepsin in the acid solution mixed with the water and add the remaining ingredients. Serve solid in 8-ounce glasses. Aspepsin Syrup.

Pepsin (pure crystals), I dram; liquid phosphate, 2 drams; vanilla syrup, 2 pints; raspberry syrup No. 2, 6 pints. Mix and strain; serve in mineral tumbler.

A Sundae Peach.

Over a ladle of peach ice cream pour a sauce made of the following: One pound of mixed nuts chopped fine, mixed with I pint of rich maple syrup. "Quality rather than variety will make the reputation of this department of your business."

Atlantic City Punch.

One ounce orange syrup, I ounce pineapple syrup, 5 dashes sherry wine, 2 dashes aromatic bitters, 4 ounces plain cream. Shake, add seltzer and strain. Egg may be added if desired.

Australian Sundae.

Vanilla cream; heavy cream; in regular sundae cup; pour over ice cream, port wine syrup, with grated nuts and top off with whipped cream and maraschino cherry.

Auto Favorite.

One-half glass cracked ice, juice of 1½ lemon, 2 dashes lactart, 2 ounces cherry malt phosphate syrup. Shake well, then fill with plain soda and serve with two straws.
