Balanced Menus with Meat—Summer: Introduction
Many believe that it is absolutely wrong to eat meat. Others say that meat is necessary for health and strength, and that it would be well to have this food at every meal. What is the truth?
A person can live without meat and thrive.
There are millions on earth now who are not meat eaters.
On the other hand, meat is not so very nourishing, if we think of the lean part. Fat is very nourishing, but the lean muscles only furnish a few hundred calories per pound. Meat does provide protein, which the body must have, but protein is obtainable from eggs, cheese, milk, whole wheat bread, nuts and many other foods.
Meat is not as nourishing as many people think it is, but it is stimulating. The extractives in meat that stimulate do not nourish.
Meat, of course, contains considerable waste matter, which serves no purpose except to cause the eliminating organs of the body to work hard.
This waste matter tends to cause deposits in the body, and hence is one of the factors of disease.
Because waste is consumed with the meat it is well to partake of this food in moderation. It may be possible for those doing hard physical labor in the open air to digest, assimilate and eliminate the meat that is taken in three meals daily, but sedentary persons in the cities should not attempt it, for the result will be premature aging with an undue amount of disease, especially of the kidneys and the liver.
City people should not eat meat more than once a day in cold weather and during the summer months they should not eat it daily; three times a week would then be sufficient. True, they may partake of it every day and do as well as the average, but it is not best.
An excessive amount of meat will in the end cause discomfort and illness.
