Griddle Cakes and Waffles

The griddle cake, as made to-day with Royal Baking Powder, is another article of food that has taken high rank upon the American table. Properly made it is delicious, healthful, appetizing and nutritious.

Eggs add to the richness of griddle cakes, but are not essential. The batter must be thin. The cakes should be small and not too thick--between one-eighth and one-quarter inch when baked.

Greasing the griddle can be avoided altogether if soapstone is used. An iron frying pan may be used instead of griddle. In any case grease only enough to keep the cakes from sticking. Turn only once.
