Bicarbonate Soda

: 2 ounces 2 " 2 8 66 1/2 ounce Color pink with American Fruit Color.

The bicarbonate soda is added to the pineapple juice to neutralize any acid that may be present.

Be sure not to add any acid to the pineapple juice used for this purpose. In dispensing this drink, ice is shaved into the tumbler until it is twothirds full; the syrup and soda water are then drawn, and more ice shaved on top. Shaving ice on top is essential. It adds greatly to the attractiveness of the drink.

Napa Soda.

One ounce blood orange syrup, I dram lime juice. Fill 8-ounce glass 7% full with coarse stream carbonated water, add above and stir. National Punch.

Three-fourths ounce strawberry syrup, 34 ounce raspberry syrup, 34 ounce orange syrup, juice of 1/2 lemon, 1½ glass shaved ice. Fill 12-ounce glass with coarse stream carbonated water, mix with spoon, decorate with fruit in season, and serve with straws.

You don't want accidental trade on soda-you want regular custom. The fountain tells people whether you are making a specialty of soda or not. Neapolitan.

One ounce Catawba wine, 1/2 ounce pineapple syrup, I 1/2 ounces lime juice, 1/2 ounce lemon syrup, ¼ glass cracked ice. Shake, strain, toss and serve. Nectar Cream Syrup.

To 2 quarts of sweet cream add 2 pounds of pulverized sugar, and stir until dissolved; add I quart orange syrup, i quart of pineapple syrup, I quart strawberry syrup, and a few drops vanilla extract. Color a pretty pink. Mix thoroughly and draw in a large soda glass with fine and coarse stream; can be served with either plain or ice cream.
