Simple Syrup (Mead New Orleans ounces)
Mead, New Orleans. 2 ounces " . 7 " 7 " 7 " 7 " 2 20 gallons Spices to be bruised in a mortar; those containing the most oil should be placed in a bag by themselves, and the others in another bag. Immerse all in the syrup, and boil from 12 to 24 hours, the longer, the better. Take 2 pounds of sassafras bark, add 3 gallons of water, and boil slowly until reduced to 2 gallons; 8 ounces allspice may be added to advantage. After spices are sufficiently boiled, add the sassafras liquor and 2 gallons of honey. Put 5 quarts in a suitable fountain, add water to make 10 gallons, and charge to 100 pounds' pressure.
We recommend the use of American Concentrated Syrups, as they require no compounding, except dilution with simple syrup. The best formulas for their use will be found under the proper headings.
Mead.
Take I gallon of simple syrup, mix with I pound of well-strained honey, and let simmer on the fire for a while, skimming off the foam. When strained and cool, add 2 ounces of American Mead Extract, 1/2 ounce of American Soda Foam, and 12 ounce of American Sarsaparilla Color. For the fountain, take 11/½ gallons of the above prepared syrup, add 8½ gallons of well-filtered water, and charge to 115 pounds.
Melon Float.
Small, ripe cantaloupe (or musk melon), cut lengthwise. Scoop out seeds and fill with ice cream (vanilla generally used); sprinkle with powdered sugar to taste.
Melon Sundae.
Take a small-sized cantaloupe, cut in two, remove the seeds, slice off a small portion from the bottom so that it may stand squarely. Place in the half of the cantaloupe the usual amount of ice cream. Top with crushed pineapple and whole cherries. Insert spoon upright in meat of cantaloupe. Place upon napkin and serve on fancy plate.
Menthe-Ade.
Mineral glass 4 full of crushed ice, 2 teaspoonfuls powdered sugar, 4 ounce creme de menthe syrup, I ounce Roman punch syrup. Draw full with coarse soda stream and serve with straws.
Menthe Fresher.
Crush fresh mint leaves with small amount of granulated sugar, add 4 ounces shaved ice, 2 ounces almond cream syrup and 4 ounces Apollinaris water. Shake, strain and fill with Apollinaris.
Creme de Menthe Syrup.
