Balanced Meatless Menus—Winter: Introduction

In winter a person may with benefit use the naturally sweet fruits which are very nourishing.

The most nourishing of fruits are prunes, raisins, figs, dates and bananas; also olives. The sweet fruits can be used in place of grapefruit or oranges if so desired.

Many of those who do not use meat are fond of lentils, dried peas, navy beans and dried lima beans. These are so rich in protein that when they appear in the menu no eggs or milk or cheese or nuts should be taken in the same meal.

If Cream of Wheat or oatmeal or any other food is prepared in the form of mush, it should be thoroughly masticated and well mixed with saliva.

All starchy foods should have good insalivation whether they are soft and mushy or hard like toast.

When we speak of nut meats, we mean any kind of nuts except the chestnut, which is specified by name when intended.

The peanut is not a nut, but it is a legume and is related to peas, beans and lentils.

Peanuts should be eaten only by those who have robust digestion. When peanuts are eaten in quantity no other protein food should be consumed in the same meal.

Both nuts and peanuts need extra mastication.

Canned fruits should be used seldom. The fresh ones or good dried ones are preferable.

Canned vegetables should be used only when the fresh ones are not to be had.

We mention various cereal drinks, but we have no special preference even when we mention them by name. Any good cereal coffee is all right.

Kaffee Hag is a well known real coffee with most of the caffeine removed, but other brands may be used too provided the caffeine is taken out. Those who value their health highly will not use real coffee or tea very frequently.
