This chapter has been devoted to meatless menus. Many believe that if they omit meat and fish from the dietary that will insure health, but this is a mistake. Especially bad are the "mock" vegetarian roasts made of legumes, grain, oil and perhaps vegetables. They are very difficult to digest.
