Meatless Menus for Gaining Weight—Summer: Introduction
Many persons who are too light can gain weight, but there are some who cannot grow heavier no matter how they eat or drink.
You will find milk, cocoa, chocolate and cream rather freely used in the following menus. They are splendid aids in gaining weight and it is all right for those who can digest them properly to partake of them. However, there are some who will be troubled with congested liver and catarrh if they eat freely of these foods and they will have to use discretion.
It is well to know that some people cannot gain weight without making themselves uncomfortable and even ill-these should be satisfied to remain slender.
In these menus you will find some combinations that we have avoided elsewhere in this book. We do not believe in making a habit of eating two kinds of concentrated starches at a meal, but you will find such combinations as potatoes with bread stuffs in these weight-gaining menus. You will find puffed rice or other cereal given with toast and you will find macaroni and other starches combined. Such combinations should be avoided in other circumstances.
The most fattening foods are oil, butter, cream and other fatty foods; bread, potatoes, and other starches; all kinds of sweets including figs, dates, raisins, prunes and ripe bananas.
You will find the iced drinks, especially cocoa and chocolate, given rather frequently in these menus. It is not necessary to have them iced. If they are iced they should be sipped very slowly.
It is a mistake to drink large quantities of cold drinks rapidly so as to chill the stomach.
Those who succeed in gaining weight should be careful not to continue the heavy eating until they become too heavy.
