Meatless Menus for Reducing—Summer: Introduction
The more calories a food contains, the more fattening it is. For this reason, we give you a table of calories. By reading this table carefully, you will understand why oily dressings, fats, very sweet things, and most starches have been omitted from the menus in this chapter.
One pound of protein produces 1,860 calories.
One pound of sugar produces 1,860 calories.
One pound of starch produces 1,860 calories.
One pound of oil or fat produces 4,220 calories.
Those who want to reduce slowly can eat a little oily dressing, but the less oil, butter, starch and sweets consumed, the quicker will be the reduction.
Those who eat according to these menus will lose weight provided they do not overeat. Many persons take it for granted that they can always partake of all the butter they wish, but in reducing the butter intake should be diminished very greatly or else butter should be omitted entirely.
Be moderate in eating.
Eat very slowly and thoroughly masticate all food.
It is better to go without food than to eat hurriedly and bolt your food.
Do not wash down foods with liquids.
Do not eat when overtired, worried, or angry.
Do not eat between meals.
Do not eat sweets such as candy, cakes, pies, preserves, etc. The sugar in fresh fruits is sufficient.
Eat sparingly of vegetables containing starch and of cereals.
Raw vegetables and raw fruits should be partaken of daily, served in salads and desserts. Cook all vegetables in waterless cooking utensils or with a small amount of water; do not drain liquid when vegetables are done; serve them with the juice. Salt sparingly about five minutes before they are done. Serve plain with a very small amount of butter. Milk may be added.
The leafy vegetables used as salads and cooked greens are most valuable for their organic mineral contents.
Those who eat plenty of fresh fruits and fresh vegetables get all the mineral salts the body needs.
