Balanced Meatless Menus—Summer: Introduction

Less of the heating foods-starches, sweets, oils and fats are needed in warm weather, and more in cold weather.

One kind of berries can be substituted for another; if blueberries are specified, you may use raspberries or strawberries instead.

Those who do heavy manual labor need more starch than others and may add starch to these menus when it is not mentioned here.

If you can obtain good nuts in the warm weather, they may be used in place of eggs or milk or cheese or custard.

Peanuts are good for those who do heavy manual labor and have robust digestive organs. Salads are stressed because they help to maintain a pure blood stream. They may with benefit be taken twice daily, and should be eaten at least once a day.

Omit vinegar, and use lemon juice instead.

Lemon juice may be used in such dressings as mayonnaise in place of vinegar.

If appetite is lacking in warm weather, it is well to take a lunch of nothing but melon, or buttermilk and nothing else, or some apricots or plums and nothing else.

Plums or apricots or other small fruits will take the place of berries or melons.

When iced drinks are used, sip them very slowly. Those with subnormal digestive organs should not drink iced liquids.

Waffles should be baked in irons requiring no greasing.
