Orange Syrup (Shake well Draw soda water)
Shake well. Draw soda water with large stream.
Spanish Lemonade. 1½ tumblerful 1/2 2 ounces I ounce The juice of 1½ an orange, the juice of 1½ lemon, 1/2 tablespoonfuls sugar, I scoop of crushed ice, and water to fill a large glass. Sparkling Punch.
One ounce lemon juice, 2 ounces orange juice, 4 teaspoonfuls granulated sugar, and ½ glass shaved ice. Mix in some soda by stirring, strain into 12-ounce glass and fill with coarse stream of carbonated water. Put 2 quarts of lemon water ice in a can imbedded in crushed ice, well salted, add 1 gill of kirschwasser, I gill of maraschino, I gill of champagne and I gill of white wine; mix thoroughly and serve.
Put a "special" on sale occasionally, one that is original, good and catchy, and one that is new to the public. A very easy and attractive one is a "Cream Puff Sundae." Procure a supply of cream puffs and cut the tops, leaving a little of the pastry as a hinge. Fill in with any kind of ice cream, replace the lid and pour over it a ladleful of walnut bisque, decorate with maraschino cherries. Make this your special for one day and then get up something equally as good for the next. Create new things. People will look to you for a novelty and the public is always ready to patronize the man who puts out the newest things, but they must be as good as they are new. Have signs that arrest the attention of the passer-by; not by their ridiculousness, but by their artistic qualities. Chop Suey, a popular concoction at present, may be advertised by a Chinaman painted on a large white card, pictured in the act of handing a sundae glass to a child or a pretty girl with "Chop Suey Served Here" printed on the card. It is not difficult to find some one who draws or uses water colors well enough to do this kind of work. A large fire cracker may be painted on blue card, and the beverage "Lemon Fizz" advertised thereon for a July 4th placard. Get up something special for the Fourth of July. No soda water dealer can prepare all his fruit, concentrated syrups, or crushed fruits and make them as good or as cheaply as he can procure them from reputable manufacturers.

A Very Hearty Drink.
Draw 2 ounces of American Chocolate Syrup into shaker, break in a fresh egg, add a spoonful of ice cream, and fill shaker with milk. Shake thoroughly, pour into a glass and top with grated nutmeg. St. Julien Punch.
Eighteen ounces claret wine, 8 ounces Catawba wine, I pint prepared lemon; 2 ounces acid solution phosphate, 4 ounces sliced lemon, 4 ounces sliced orange, 2 ounces Jamaica rum, 1 gallon water. Sweeten to suit taste. Mix in large punch bowl with cracked ice and color to suit. Strawberry-Ade.
Juice of 1 lemon, strawberry syrup to sweeten; crushed ice, shake well, pour into tall glass and fill up with plain water. Serve with straws. Strawberry Color.
One-fourth ounce to a gallon of syrup will give a rich strawberry color. Strawberry Floss Syrup.
